Maple Mustard Glazed Tofu Steak

Maple mustard glazed tofu steak is a delightful baked dish that marries sweet, tangy and spicy flavours, making it an excellent choice for those looking to incorporate more plant-based meals into their diet. The firm texture of the tofu provides a satisfying bite, while the rich glaze enhances its flavour. As the tofu is marinated and then grilled or baked to perfection, it develops a caramelised exterior, creating a mouth-watering contrast to the tender interior. This dish is not cooked in under 30 minutes but can also be prepped ahead of time, eaten warm or cool and can be paired with any side dish.

I used The Tofoo Co Naked Tofu but you can use almost any firm tofu as it helps keep the “steaks” their shape. Cut the tofu into four squares or rectangles and score them with a crosshatch pattern to help them absorb even more of the marinade, as it will seep into the cracks.

Prepare the marinade/sauce and marinate the tofu for a minimum of 15 minutes but this can be prepared ahead of time with the tofu marinating all day. Either brush the tofu on a pre-lined baking sheet and pop it in the oven or just place it in some tupperware.

Bake the tofu in the oven at 200°C, reapplying the marinate every 10 minutes.

I served this on a bed of roasted asparagus with buttery leeks and miso dijon mashed potato using some of the leftover marinade as a sauce. The steaks can just as easied be paired with couscous and roasted veg, rice and peas or even with chunky chips and a peppercorn sauce.

This meal is oil-free, easy to cook and will even impress your meat-eating friends.

Maple Mustard Glazed Tofu Steak
(serves 2)

Ingredients

  • 400g firm tofu, drained and pressed

  • 6 teaspoons maple syrup

  • 3 teaspoons American yellow mustard

  • 4 teaspoons soy sauce

  • 1 teaspoon sriracha

  • 1 teaspoon garlic powder

  • Black pepper, to taste

Instructions

  1. Preheat the oven to 200°C (180°C fan).

  2. Make tofu "‘steaks’: Cut the block into four steak-sized squares. Use a sharp knife the score the tofu making a crosshatch pattern on top of them. Take care not to cut all the way down the steaks as they will fall apart.

  3. Make the glaze: In a bowl, whisk together the maple syrup, American mustard, soy sauce, Sriracha, garlic powder and black pepper until well combined.

  4. Coat the tofu: Place the tofu ‘steaks’ in a large Tupperware (or place on a lined baking tray) and pour most of the marinade over them. Gently brushing to ensure all pieces are well coated. Let it sit for at least 15 minutes to absorb the flavours.

  5. Line a baking tray with parchment paper and place the tofu atop it score-side up.

  6. Bake in the preheated oven for 25-30 minutes, reapplying the glaze every 10 minutes.

  7. Optional: Turn the oven over to grill for 5 minutes to make the top of the steaks extra crispy.

  8. Serve: Once baked, remove from the oven and place alongside your sides. Pour any extra sauce over the top.

Serving Suggestions
